Pumpkin season at Gideon’s comes with a story, and this year it’s the return of a character who hasn’t been seen since January 2022. Dr. Tobias Brimstone, the Intrepid Explorer of Gideon’s lore, has arrived for September with his own otherworldly take on pumpkin spice. The month covers everything — a limited cookie, a pumpkin caramel cake, the returning nitro cold brew, and a full merch drop.

The September Cookie

The Pumpkin Bread Chocolate Chip Cookie is the limited flavor for the full month.

It’s built around real pumpkin and Dr. Brimstone’s pumpkin spice blend, with a small amount of chocolate worked into the interior — enough to add depth without overwhelming the pumpkin. The whole thing is topped with pumpkin butter crumbs.

The restraint on the chocolate is the notable choice. Gideon’s is best known for its half-pound chocolate chip cookie, and the easy version of a pumpkin cookie would bury the pumpkin under it. Working chocolate into the interior rather than through the whole cookie is a deliberate decision to keep pumpkin as the lead flavour.

“While supplies last each day” is the operative phrase. Gideon’s sells out of limited flavours regularly, and the Disney Springs location runs a virtual queue during busy periods.

The September Cake

The Pumpkin Caramel Double Frosted Cake is a genuine double-frosted build:

• A full layer of caramel buttercream underneath
• A full layer of pumpkin cream cheese buttercream on top
• A vanilla cinnamon swirl cake — soft with a slightly crumbly texture

Available by the slice every Wednesday and Saturday throughout September. Whole cake preorders are available this month only at the East End Market location.

Note that distinction carefully. Slices are available at both locations on two days a week. Whole cakes are East End Market only — that’s Gideon’s original Orlando shop, not Disney Springs.

The Cold Brew Returns

The Pumpkin Chai Nitro Cold Brew is back at Gideon’s Disney Springs for September, served in a Dr. Tobias Brimstone branded cup sleeve.

Nitro cold brew with chai and pumpkin is a better fit for Gideon’s than a standard PSL, and the branded sleeve makes it part of the month’s collectible package rather than just a drink.

Dr. Tobias Brimstone Returns

This is the part regulars will care about most.

Dr. Tobias Brimstone appears on the September collectible menu as a Morsel character — his first appearance at Gideon’s since January 2022. Gideon’s is hinting he may be connected to something bigger happening at the bakehouse. Details to follow.

Why That Tease Matters

Gideon’s runs an actual fictional universe, and that’s unusual for a bakery.

The shop is built on invented lore — Gideon himself, the Morsels, a Victorian-gothic backstory delivered through collectible menus, character art, and shop décor. Regulars collect the monthly menus the way people collect pins.

Bringing back a character absent for nearly four years and explicitly teasing “something bigger” is the kind of move that generates genuine anticipation in that community. It also lands in September, immediately before Halloween season — and the merch drop includes an All Hallows Scented Candle described as getting you ready for October.

The reasonable read is that Brimstone is a setup for whatever Gideon’s does in October. That’s inference, not confirmation.

The pin is the one that moves fastest. Gideon’s pins have an established secondary market, and a character returning after four years is exactly the kind of scarcity collectors respond to.

Practical Notes

Gideon’s Disney Springs has no seating of its own, which trips up first-timers. The nearby Waterview Park now has a shade canopy over its seating area, making it a reasonable spot to sit with a cookie.

Go early for the limited cookie. “While supplies last each day” means daily sellouts are normal, and the Disney Springs location draws the heaviest traffic in the afternoon and evening.

Whole cakes require the East End Market trip, roughly 20 minutes off property in Orlando’s Audubon Park district.
